Collectivus provided full branding and interior design for this Sydney based dessert and brunch bar, branching out from their CBD location with a new suburban location. A modern take on the traditional is created with a European feel patisserie with Australian tones of emerald and sage green working with black and white feature tiles and marble and brass highlights. The space echoes the signature dessert of the chef and will entice the high-end consumers seeking comfort and quality.

The brief for Moss was to create a space that exuded refined elegance. We focused on utilising more of a muted palette, rather than the standard colourful interiors generally associated with desserts – to showcase the desserts rather than overwhelm them.

The rich use of Hunter green was inspired by the Moss Dessert, curated by head pastry chef Reynold Poernomo – drawing parallels between interior and offering.
