Design: Giant Design

The Sushi Roll brand was in need of a major design overhaul before a planned roll-out of new stores this year.

Giant conceived this pavilion site in Balgowlah as a traditional Japanese Teahouse, with contemporary detailing to contrast the dark timber elements of the shell. The restaurant opens out onto an exterior terrace,with bifold windows to both sides. The front facade, meanwhile, has a timber portal frame with timber slots at the windows.

The dark timber is offset by the white Carrera marble used on the sushi bar and tables. A central ceiling feature made from suspended bamboo cut to random lengths is lit from above. Feature lighting on the backwall is made from polished stainless steel panels, lit from behind by red LED lights
